Steak, Mushrooms & Pesto Toast

1 Bakery baguette
1 1/2 pounds top sirloin steak (I use skirt steak)
1 teaspoon seasoned pepper
1/2 teaspoon salt
3 tablespoons extra-virgin olive oil, divided
8 ounces pre-sliced baby portabella mushrooms (rinsed)
5 fresh garlic cloves
1 tablespoon basil pesto

Cut baguette diagonally into 1-inch thick slices; set aside.

Preheat large sauté pan on medium-high 2–3 minutes. Cut steaks into 4 portions; sprinkle both sides with seasoned pepper and salt (wash hands). Place 1 tablespoon of the oil in pan; swirl to coat. Add steaks (wash hands); cook 5 minutes. (Do not turn steaks.)

NOTE: Steaks can also be grilled; time will be about the same. Prepare mushrooms and bread on stovetop following instructions below.

Turn steaks; add mushrooms around steaks. Crush 3 cloves of the garlic, using garlic press, into pan over mushrooms. Use knife to remove garlic from bottom of press. Cook 4–5 more minutes or until steaks reach an internal temperature of 145°F for medium-rare. (Adjust time as needed for desired doneness.) Remove steaks and mushrooms from pan, reserving drippings in pan, and cover to keep warm.

Reduce heat to medium; add remaining 2 tablespoons oil and pesto to drippings. Crush remaining 2 cloves garlic, using garlic press, into pan and swirl to mix. Place bread slices in pan and cook 3–4 minutes, turning once, or until toasted. Serve with steaks.

Sundried Tomato Rosemary Bread

I dont own a breadmaker but love fresh bread, and this one is super easy and everyone loves it. Anything with rosemary makes the whole house smell good while its cooking. Its super good with spinach dip (publix has a good spin dip in the deli section)



Sundried tomato rosemary bread

3 cups all purpose flour
3 teaspoons baking powder
1 teaspoon salt
1/4 cup sugar
2 -3 tablespoons rosemary garlic seasoning blend
1/4 cup finely chopped sundried tomatoes
1 (12oz) can or bottle of beer
cooking spray to grease loaf pan

Lightly grease loaf pan with cooking spray.
Preheat oven to 350 degrees.
Combine all remaining ingredients except beer in a large bowl.
Pour beer into the mixture and stir thoroughly - don't overmix!
Pour bread bater into greased loaf pan.
Bake 50-55 minutes in preheated oven.
Remove from oven and allow to cool before slicing.

Serve with your favorite dip, with cheese or cut in cubes & bake for herbed croutons

Chocolate Cinnamon Bread

Ingredients for Chocolate Batter:
3 sticks unsalted butter, at room temperature
3 cups granulated sugar
5 large eggs, at room temperature
2 cups all-purpose flour
1 1/4 cups Dutch processed cocoa
1 tablespoon ground cinnamon
1 teaspoon salt
1/2 teaspoon baking soda
1 cup buttermilk
1/4 cup water
1 teaspoon vanilla extract

Ingredients for Coco-Spice Sugar Crust:
1/4 cup granulated sugar
3/4 teaspoon ground cinnamon
1/2 teaspoon Dutch-processed cocoa powder
Pinch of ground ginger
Pinch of ground cloves
1/4 cup decorating or sparkle sugar

Preheat the oven to 350. Grease to 9 x 5 x 3 inch loaf pans and line the bottom of the pans with parchment paper.In the bowl of an electric mixer, cream together the butter and sugar with the paddle attachment on medium speed, until light nd creamy, about 5 minutes. Add the eggs one at a time, beating until each egg is completely incorporated before adding the next and scraping down the sides of the bowl several times.

Meanwhile, in a medium bowl, sift together the flour, cocoa, cinnamon, salt, baking powder and baking soda.

In another bowl, whisk together the buttermilk, water and vanilla. With the mixer on low speed, alternately add the flour mixture and buttermilk mixture to the butter, beginning and ending with the flour and beating just until blended.

Divide the batter between two pans, shake the pans to even the tops and set aside.In another small bowl, whisk together the sugar, cinnamon, cocoa, ginger and cloves. Sprinkle the surfaces of both batters with the decorating sugar. Sprinkle with cocoa-sugar mixture, dividing evenly. Bake until a toothpick inserted in the center comes out clean, abotu 45 to 50 minutes. Let cool completely, run a thin knife around the sides to release the bread and remove from pans.

Pumpkin Bread

I have been offered money for this recipe =) Love it!!

3 cups sugar
1 cup vegetable oil
4 eggs beaten (1 at a time)
1 can pumpkin
2/3 cup water
3 1/2 cups flour
2 tsp baking soda
1 1/2 tsp salt
2 tsp cinnamon
1 tsp nutmeg
1/2 tsp ginger
1/2 tsp cloves

Mix the first 5 ingredients in a medium bowl.

Mix the dry ingredients in a large mixing bowl.

Add wet to dry a little at a time. I always mix by hand but I'm sure it would be fine with a mixer.

Bake in greased loaf pans at 350 for 50-60 minutes.

Makes 5 small or 2 large. I have better luck with the small pans.
