Feta Potato Wedges

2 Lbs russet potatoes, sliced into wedges
1 1/2 tbsp olive oil
2 tsp oregano, chopped
4 garlic cloves, minced
salt and pepper to taste
8 oz. feta cheese
Preheat a baking sheet or roasting pan in a 400 degree oven
Toss potatoes with oil, garlic, oregano, pepper and salt
Spread the potatoes in a single layer on the pan
Roast the potatoes in the oven until browned (on 1 side), about 15 minutes
Flip the potatoes and cont. roasting until golden brown on the second side and tender, about 15 minutes
Sprinkle crumbled feta on potatoes before serving.
(You can substitute parmesan cheese for feta cheese)
