Spinach Patties

1 10oz box frozen, chopped spinach, cooked & drained (bone dry)
1 egg
1/4 cup italian breadcrumbs
1/4 cup parmesan cheese
1 small onion, minced
2-3 cloves garlic, minced
salt, pepper, italian herbs to taste
3 tbsp olive oil

Saute onion & garlic until glassy.

Combine spinach, onion, garlic, breadcrumbs, cheese and herbs.

Heat olive oil in a frying pan. Drop heaping spoonfuls of spinach mixture into oil. Cook until browned on one side and flip, until browned on the other. Let rest on a paper towel to blot out extra oil and serve.

They are good hot and cold. Also, the original recipe called for the mixture being stuffed into italian peppers, sliced lengthwise, but I'm not a big fan of cooked peppers, so this is my version.
