Creamy Tarragon Potato Salad

1 bag of red potatoes (or your fave kind)
1/2 cup mayo
1/3 cup sour cream
Fresh Tarragon
1/2 red onion diced
2 tbsp dijon mustard
salt and pepper to taste
3/4 diced celery (optional)

I slice the potatoes into 1/4 inch thick pieces, but you can cut them into chunks if you want. Cut the potatoes and boil them until soft.

Finely chop the tarragon (food processor works great) until you have about 1 1/2 tbsps of the herb

Mix mayo, sour cream, mustard, onion, celery and tarragon in a large bowl.

When potatoes are done, rinse them and let them cool for a bit. Then mix in with the mayo mixture. Chill in the fridge. Salt and pepper to taste.

Note: Tarragon has a very strong, distinct taste/smell. Some people love it, some don't. If you're sketched out by it, you can substitute dill. Both ways are delicious. My favorite thing to do is mix the leftover chopped tarragon and extra onion into ground beef for burgers. And make extra of the mayo/sour cream/mustard sauce for the buns. Enjoy!
