Hash Brown Casserole

2 lb hash browns
½ cup melted butter
1 tsp salt
1 tsp pepper
1 can cream of mushroom soup
¼ cup chopped onion
1 pint sour cream
10 oz shredded cheese (sharp and pepper jack)
mix and bake in a greased pan for 1 hr at 350°
Brian usually cuts up an onion and puts it in there. He also usually puts it together the night before. A bit before we are ready to get up one of us will go and put it on and then it is ready when we actually do get up.
