Squash Casserole

2 lbs of yellow squash, cooked and squished
1 can cream of chicken soup (I'm going to try it this year with cream of celery)
1 carrot, finely grated
1 cup sour cream
1/2 package stuffing mix
6 tbsp butter (melted)
salt and pepper
mix all ingredients except 1/2 the stuffing mix & butter)
put into greased 2 qt. casserole dish
mix remaining stuffing and butter and layer on top
bake @ 350 for 30 min (at 20 min check to see if topping is getting to brown, if so, cover with foil)
This recipe freezes great, and IMO tastes better when it's been frozen/refrigerated and re-heated. I'll make 2 next week and freeze one for x-mas.
