Roasted Potatoes

1 1/2 pounds new potatoes, quartered
2 tablespoons olive oil or vegetable oil
1 garlic clove, minced
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/8 teaspoon pepper
shake in a bag, pour into ungreased pan, bake uncovered at 450 for 35 minutes (shake the pan about every 10 minutes to evenly cook). remove from oven and cover with foil to keep warm!
