Oven Omelet

This can feed a ton of people (I last fed 30 with it!) so obviously scale back for a family. This is great for Christmas morning or something when you have tons of people over but dont feel like cooking a whole lot. This also used to feed about 35 of us in my last office. She used a bigger pan and made it thinner to go further (2 doz). I hope that makes sense.... The one I made was nice and thick since I used more eggs.

2-3 dozen eggs
1 or 2 cups cheese
16oz sour cream
1 or 2 cups ham, bacon or browned sausage
1 stick of melted butter
salt and pepper to taste
(cup or so of anything else you might want in an omelet)

Mix eggs and sour cream first then add everything else.
The whole thing can be mixed the night before if you want. It just take a little longer to cook b/c it will be cold and in cold pans.

Use 2 9x13 pans sprayed with non-stick spray

Bake @ 350 for about 30 minutes or until eggs are cooked. Large pans may take a little longer.

Again, cut back for family. I estimate 2-3 eggs per person depending on how much other stuff you are adding. For 5 of us at Christmas, I use 1 doz eggs, 1c cheese, 8 oz sour cream, 1c ham and 1/2 stick butter.
